The cornbread gets my seal of approval.  I put a salsa verde in there which already has tomatillos (plus the 3 good fresh ones), so it has a bright green flavor.

Colby jack cheese.

Fresh sweet corn.

Buttermilk.

I might've gone a little crazy with the eggs, but I like custardy quality in this recipe.

Actually the black beans were a new addition but it just seemed to make sense.

I'm waiting for JeffWerbo's port party later this year (it's been planned for years and years, since he bought the wine ages ago...get it? ages?) (cough) in part for the bleu cheese. Was gonna make a pate out of it, with walnuts, for the party. Have a recipe around here somewheres... (I think it's in October if anyone wants to head to Torannah.)

that was easy!  AND it calls for stilton or roquefort, which i haven't created a recipe for.  perfect!

Mini Cheesecakes

    * 2 teaspoons unsalted butter, softened
    * 1 slice bread, processed in a food processor to make 1/2 cup bread crumbs
    * 1 cup (one 8-ounce container) whipped cream cheese
    * 2 large eggs
    * 1/4 cup sour cream
    * 1/2 teaspoon salt
    * 1/2 teaspoon freshly ground black pepper
    * 2 tablespoons minced fresh parsley
    * 1/4 cup crumbled blue cheese, like Stilton or Roquefort

the cheesecakes were deelish.  the entire recipe can be found here. instead of souffle molds, i used a regular old cupcake tin.  after cooling, craters formed in the center of each cheesecake.  i got some anjou pears which i am going to dice and caramelize tomorrow to fill the craters.    also, i modified the gorgonzola recipe to include applewood smoked bacon and regular toast squares in place of the melba. (toast, horsey mayo, bacon, red onion marmalade, gorgonzola) people are gonna thank me tomorrow.  i better get a good section.

since i had the night off, kim got a girls night out drinking and i got maddie duty.  i am currently enjoying a bottle of '07 perrin and fils cotes du rhone (85 % grenache 15% syrah....$10!!!) and watching law and order:ci (hi jeff!).  also figuring out the acoustic intro/bits of "gimme danger" since it seems i'm gonna have to actually play it during our stooges set. and still finding time to crappitize! woohoo!

ooof.  there is a very strict threshold of dry/moist in cornbread. can go from wonderful to give me a glass of milk in less than a minute.  cornbread pma's headed to ohio/chicago toot sweet.
