Flaubert was a relentless editor, a perfectionist.  If that was cut, it probably was cut for a good reason.  Reading it only makes sense if you're fascinated by the process of creation.  Which I am, so maybe one day... I would be all over it if it was the notes to Salammbô instead of Madame Bovary.
